Like so many restaurant owners, husband and wife Seth and Laura Carey were unsure they would survive the pandemic, as the couple’s life work and savings is wrapped up in their restaurant—Veraci Pizza in Spokane’s Kendall Yards. Though not surprised, they were overwhelmed by the community’s showing of support, which kept the restaurant going strong despite all the uncertainty that surrounded local businesses.


As Laura shares, “The Inland Northwest stepped up big time and supported small businesses in a very real way. It is because of our customers that we are still here and hope to continue to be here for years to come!”


Dishing up their delicious wood-fired pizzas since 2014, Veraci has been satisfying customers since day one. Featured on the menu, of course, are their wood-fired thin-crust pizzas (with vegetarian and gluten-free options available), fired up in their one-of-a-kind ovens, which allows them to cook their gourmet pizzas at 800- to 1,000-degree temperatures, providing a unique—and delicious—end product. You’ll find a selection of salads, appetizers and desserts, as well as a variety of cool cocktails, beer and wine, perfect to enjoy outdoors on the patio overlooking the Spokane city skyline—and they’re planning to add outdoor heaters for the winter months.


When interviewed, the restaurant was seating at just 30 percent capacity in order to maintain proper distancing between tables, as the Careys truly care for the health and safety of all they serve—in addition to a delicious meal and great service. Laura credits the excellent staff who have been dedicated to remaining open consistently and safely, as well as Kendall Yards for providing a concierge To-Go service for all their businesses. “We hope that one day—in the not too distant future—we will be able to open our bar top seating back up, fill up our patio, and have all of the tables open inside again,” Laura says.


Laura and Seth are inspired to continue the work they do each and every day because of the community they serve—their staff, the neighborhood, the lunch crowd and evening diners. “I can't say in words how appreciative our employees, our vendors and our family are to the local community.”
