Cozy Up with Versalia Pizza


Dishing up creative pizzas, soups, salads and more … and catering too!

By Jillian Chandler From what began as a mobile pizza oven to now two successful brick-and-mortar restaurants, Laura and Seth Carey couldn’t be prouder of Versalia Pizza and are truly grateful for those who continue to show their unwavering support of their vision. On the menu, of course, are their flavorful thin-crust pizzas (with vegetarian and gluten-free options available). Guests can also choose from a selection of creative salads, appetizers and desserts, beer and wine, as well as a variety of seasonal cocktails (available at their Kendall Yards location).

Laura and Seth credit Chris Ambrose, or “lead pizza creator” as he prefers to be called, for the creativity. “Chris thinks about the tastes and flavors he’s had in the past in other dishes and asks if he can recreate that into a pizza,” affirms Laura. “He really tries to make the specials ‘special’ with a unique approach or ingredient. His fine-dining experience has really helped with ideas and thought processes.”

To get an idea of the creativity in the kitchen, seasonal menu offerings include The Pumpkin King with pumpkin puree, braised pork, Anaheim peppers, herbs and hot honey on their three-cheese blend. And during football season, there’s the Jalapeño Popper Pie with garlic cream cheese, mozzarella, Beecher's cheddar, bacon and jalapeños, and finished with honey and crispy panko.

Nothing beats the cold like a bowl of homemade soup. Whether you choose to pair it with your favorite pizza or as a stand-alone (sure to satisfy your hunger while warming your soul), Versalia’s menu offers several during this season, including their fan favorite—the Tomato Basil Soup. While they won’t give out the recipe, the blend of tomatoes, cream and herbs, served with their focaccia, is one that people look forward to being back on the menu each fall.


Be sure to grab a window seat at their Kendall Yards location, where diners can take in views showcasing the Spokane River Valley along with the city skyline and Monroe and Maple Street bridges. “It really is one of the best views in the city!” Laura smiles. The Liberty Lake location is situated in the River District next to Orchard Park, just a short walk from the Centennial Trail with views of the surrounding hills. Come the warmer spring months, both locations offer outdoor dining.

When it comes to what the Careys are most proud of when it comes to their restaurants, it is the challenges they have navigated through throughout their nearly 15 years in business. “No one expected us to make it with our mobile woodfired oven past the first summer,” Laura reflects. “We made it through heat exhaustion, thunderstorms, wind, wildfire smoke, COVID—and now have two thriving restaurants to go with our mobile ovens.”
